Shiraz Rose 2006/7 75cl Bottle

A vibrant and youthful pink colour attractive fresh berry aromas and soft spicy flavours are the hallmarks of this wine. The ideal accompaniment to a wide range of dishes including pasta, white meats, seafood and poultry. Average rains during the winter of 2005 provided the perfect springboard for the new growing season. Mild conditions with ample spring rains ensured healthy physiology and good fruit set in Shiraz vines. Variable weather conditions were encountered during the ripening period, with the extreme heat wave conditions of mid January giving way to heavy rain periods during the early part of February. As harvest approached weather conditions were generally cool to mild with only few days of intermittent rain. Shiraz grapes were un-affected by the vagaries of the weather. The generally cool end of season allowed a long but progressive sugar accumulation in the berry, which optimised the sweet and spicy raspberry characters of Shiraz at harvest. Jacob's Creek Shiraz Rosé captures both the rich berry fruit flavours of the warmer grape growing districts with the structure and spice from the cooler Shiraz regions.

From the vineyards in Coudray-Macouard, the Cabernet Franc is planted on chalky-clay soil. The harvest yielded 60 hl/ha and was fully destemmed before a gentle pressing. Maceration was undertaken for 12 to 24 hours to obtain colour and body before fermentation at controlled temperatures to preserve the fresh fruit aromas. Filtration was through kieselguhr (a naturally occurring, soft, chalk-like sedimentary rock that is easily crumbled into a fine white to off-white powder), and the wine was cooled before bottling to avoid the formation of tartaric crystals. Exceptionally summery dry Rosè made wholly from selected Cabernet Franc vines. Offers a wealth of raspberry fruit and a fresh, leafy character. A wonderful wine for light salads, chèvre chaud (or other goat's and sheep's cheeses), or fresh fruit.
